Good Eats

I’m a woman of many addictions.

-Costco. If you crave chicken nuggets and Annie’s mac look no further.
-Amazon. I know the exact time, down to the minute, when the Amazon man (aka FedEx delivery dude) will show up to our door. I’m pretty confident that if days went by without a package being delivered our Amazon man would call the cops to make sure we were still alive.
-Buckwild. Yup, not ashamed.
-Pinnacle Whipped Cream Vodka. Three Olives Loopy vodka. Actually, all flavored vodkas in general. Why were these not invented yet during my college years? Perhaps I’m more obsessed with the idea of fun vodkas. Nursing and waking up each day with two little ones just doesn’t go hand in hand with yummolicious mixed drinks.
-Pinterest. Cannot.stop.pinning.

I’ve been pinning out the wazoo lately. V-day crafts (which I’ll try and get to tomorrow) and food has been happening in the S house. Thank God for nursing burning like 500 calories a day because I need it now more than ever.


Remember that Nutella Banana ice cream I mentioned? IT ACTUALLY WORKED.  Sort of blows my mind that frozen bananas can basically turn into soft serve.

I sliced one large banana and froze it.  After it was good and solid I threw it in the food processor with two tablespoons of Nutella for about a minute.  Topped it off with sprinkles and badaboom, dessert was served.


Chocolate covered caramel corn.  Well what you see here is just plain old chocolate covered popcorn.  After I devoured like all of it I realized that something was off.  Duh! I was missing the caramel factor.  Incredible. So incredible that I cannot even show you a picture.  I ate it that fast.  Recipe here. Just drizzle it with chocolate and top with sprinkles (see a trend?).


Perhaps my finest creation.  Cinnamon Toast Crunch.

Chicken stuffed shells. I modified this baby to my liking but based it off of this recipe:

Ingredients:
1 (12-ounce) box uncooked jumbo pasta shells
2 cups chopped cooked chicken
2 cups fresh chopped spinach
1 onion, chopped
2 cloves garlic, minced
1 (15oz) container ricotta cheese
1 (8oz) package cream cheese, softened
1 (5oz) package shredded Parmesan cheese (about 1 2/3 cups)
1 large egg, lightly beaten
1 Tablespoon dried parsley flakes
2 cups shredded mozzarella cheese, divided
2 (26oz) jar prepared Alfredo sauce
Direction
1. Cook shells according to package directions. Drain and set shells  aside.
2. Preheat oven to 350°. Lightly grease 9×13 baking dish.
3. In a large bowl, combine chicken and all the rest of the ingredients except mozzarella and sauce. Stir in 1 cup mozzarella. Spoon into shells.
4. Spread half of sauce into prepared baking dishes. Arrange shells over sauce; top with remaining sauce. Cover tightly with heavy-duty aluminum foil.
5. Bake, covered, for 40 minutes. Uncover, sprinkle with remaining 1 cup mozzarella. Bake for 5 to 10 more minutes.


Enjoy.  And don’t blame me.  It IS Fat Tuesday after all!

  1. The banana soft serve is the GREATEST thing ever. I like to add strawberries. Who knew there could be such a healthy alternative to ice cream.

    My dad bought some caramel corn with white and milk chocolate on it and I probably consumed half the bag. I'm not sure if I should make this but I really want it!

  2. Ohhh, Parker would die for strawberries mixed in. I'll try that next!

    I used to get chocolate covered caramel corn from our neighbor who is a Boy Scout but they stopped selling it. WTF! So now I'm trying to replicate it's awesomeness. I think some better quality chocolate (I just used Nestle morsels) might be what it needs.

  3. So David and I are totally addicted to Buckwild too. Do you think its because it reminds us somewhat of home? I would like to think that is not it.

    I think Shain is so cute, in a weird, country-bumpkin, endearing sort of way.

  5. I'm pretty sure our UPS delivery guy hates us because of Amazon. But, seriously. Who has time to go shopping with two little ones and a full time job?? Thank God for both Amazon and Pinterest.

    1. I think ours is mad at us too. Typically he leaves the packages on our porch but the past few deliveries have been placed right outside our garage door were we could run them over. Hmmmm...

      For real, we have no time to be running errands. Between Amazon and my monthly Costco trip I rarely have to go anywhere else. Well Target for fun :) Which is now adding an entire grocery section which will make picking up odds and ends super easy!
